Southwest Sunshine Burger Tacos

What happens when you mix a delicious Southwest Sunshine Burger with a taco recipe?  Deliciousness. Pure and simple.

I was craving tacos the other evening after my run and decided to try using my Southwest Sunshine Burger patty as my taco “meat.”  I was pleasantly surprised with how easy and healthy these tacos really were – not to mention how completely mouth watering!!

Ingredients:

Makes 2-3 tacos

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 Southwest Sunshine Burger patty
  • ½ packet of low sodium taco seasoning
  • 1/3 cup water
  • ½ cup black beans
  • 1 sliced tomato
  • ¼ cup spinach or shredded fresh lettuce
  • 1/3 cup sliced onion
  • ½ avocado, sliced
  • Fresh salsa, as needed
  • Gluten-free tortillas

Heat olive oil and garlic over medium heat until garlic starts to brown.  Add Sunshine Burger patty, taco seasoning and water and let cook from 2-3 minutes until warm.  Place patty on tortilla, top with black beans, tomatoes, lettuce, onions and avocado. Top it all off with some fresh salsa.

    i would think that you could chop the burger into small pieces and use in a wrap. It would be great if Sunshine Burgers marketed a filling thAt could be used in many ways.

      You make an excellent point, Carole!. Sunshine Burgers lend themselves to other uses. For tacos or wraps, cutting the heated patties into strips or cubes works well. While they crumble well, this is usually best done right before serving.

    Its really easy to crumble it and make it into ground “meat” for wraps~
