I love making pizza and am always looking for new ways to enjoy it as a weekday vegan. Sure there are plenty of fake cheeses out there but they often contain a lot of oil which I’d rather avoid and even though I have made my own on more than one occasion, its always nice to find something easier…that just works! I started experimenting with different sauces and finally tried spicy red pepper hummus and cilantro and tofu spread which had so much flavor, the pizza really didn’t need any cheese.
Ingredients:
- 4 whole wheat pitas
- 8 tbsp Spicy Red Pepper Hummus or Cilantro & Lime Tofu Spread (I did a little of both!)
- 2 tbsp olive oil
- 1 tbsp red chili flakes
- 2 cloves garlic, minced
- 1 medium red onion, chopped
- Salt & pepper to taste
- 6-8 kale leaves, chopped
- 2 cups sliced mushrooms (I used oyster but others will work as well!)
- 1 Garden Herb Sunshine Burgers Patty
Preheat oven to 400. Heat 2 tbsp olive oil in a medium pan. Add garlic, onion, chili flakes and salt and pepper and heat for 1-2 minutes until garlic starts to brown. Add kale and mushrooms and sautee for 3-4 minutes. Warm the Sunshine Burgers patty and crumble. Spread hummus or cilantro & lime spread on the pitas and put kale and musrhoom mixture on top along with the Sunshine Burger crumbles. Bake for 25-30 minutes. Enjoy!
