I had a lot of zucchini on hand and decided to make zucchini boats. They’re not only delicious but also healthy!
- 1 medium size zucchini, sliced in halves
- 1 green bell pepper, diced
- 1 large ripe tomato, sliced
- 4 cloves garlic, minced
- 1 small onion, chopped (opt.)
- pinch of oregano
- pinch of salt and pepper
- Chopped or shredded vegan mozzarella style cheese
- 1 defrosted Sunshine Garden Herb or Original Sunshine Burger
- 1 tbsp olive oil
Start by cutting a medium size zucchini in half length wise and place cut side down on a baking pan with parchment paper and drizzle with olive oil. Bake at 375 for about 35 min.
In the meantime chop the bell pepper, onion and garlic and saute in a small frying pan with some olive oil till tender. Remove from heat.
Dice the tomato and add this to it along with the oregano and salt and pepper. Take the Baked Zucchini from the oven and let cool.
Scoop out the inside of the baked zucchini halves leaving the outside shells facing up on the baking sheet. Take the insides and chop and add it to the other veggies. Fill the zucchini halves with this veggie mixture. Next take the defrosted Sunshine Burger and cut it into quarters. Roll each quarter into a little veggie ball and place them on top of the stuffed zucchini halves. Sprinkle with veggie cheese and bake for about 30 minutes at 375 till brown and tender. Serve with a nice summer salad and your favorite rolls.
