Sweet Potato Fajitas

Since my last veggie box was full of sweet potatoes and I didn’t feel like baking, roasting or mashing them, I decided to use them for veggie fajitas instead.  Delicious…


  • 2 Southwest Sunshine Burgers
  • 1 cup pineapple juice
  • 1/4 cup tamari
  • 2 tbsp lime juice
  • 2 tsp ground cumin
  • 2 tsp olive oil
  • 1/2 tsp fresh ground black pepper
  • 1 garlic clove, minced
  • 2 cups onion, sliced
  • 2 cups bell pepper, sliced
  • 1 and 1/2 cup sweet potato, sliced
  • 1/4 tsp salt
  • Whole wheat tortillas
  • Salsa, to taste

Warm the Sunshine Burger patties and then cut into six pieces.  Combine pineapple juice, soy sauce, lime juice, cumin, oil, 1/4 teaspoon black pepper, and garlic in a small saucepan; bring to a boil. Pour pineapple juice mixture over Sunshine Burger. Marinate at room temperature for about 15 minutes.

Lightly coat onion, bell pepper and garlic with olive oil; sprinkle with salt and 1/4 teaspoon black pepper. Saute about 2 minutes or until lightly browned, turning occasionally. Add the sweet potatoes and saute about 4-5 minutes or until tender.  Remove the Sunshine Burgers from marinade, reserving marinade. Place the Sunshine Burger in the pan for about 2 minutes spreading them occasionally with reserved marinade.

Warm the tortillas and then arrange the veggie mixture and Sunshine patties inside it and top with fresh salsa.
