Fall Inspired Vegan Meal

Last night was one of those perfect October nights – when the sky is super clear, the moon is shining bright and the air is just a tad brisk – the perfect kind of night for a run followed by a nice, warm home cooked meal.

Since I still had a lot of sweet potatoes leftover from my CSA box, I decided to do a simple veggie roast with a side of polenta and a steamed artichoke.

Love roasted veggies!

It turned out to be the best post run meal as it was super simple to prepare, extremely nutritious and really yummy!
