Simple Vegan Polenta with Olive Bread

After a fast six mile run all I could think about was dinner.  I needed something warm, fast and delicious….Polenta to the rescue!  Polenta with delicious veggies and a side of Olive Bread.

Polenta and Olive Bread --- Yes, PLEASE!

Ingredients:

  • 1 cup polenta
  • 3 cups water
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • red chili flakes, to taste
  • salt and pepper, to taste
  • 4-5 leaves kale, chopped
  • 1.5 cups mushrooms, sliced
  • 1 Sunshine Burger patty, cut into small pieces
  • 2.5 roma tomatoes, sliced

Place the polenta and water in a microwave safe bowl and heat for 7-8 minutes (stirring frequently) until it has thickened. Heat the olive oil in a medium saucepan.  Saute the garlic, salt and pepper and red chili flakes until they are golden brown.  Add the mushrooms and kale and saute for 2-3 minutes or until tender.  Heat the Sunshine Burger patty.

Put the veggie mix, tomatoes, and Sunshine Burger patty into the polenta and stir.  Enjoy!
