Vegan Southwest Pasta

With all this running, I’ve been in the mood for some serious pasta lately.  For a delicious and different kind of pasta dish, try this Mexican inspired pasta. So great topped with Sunshine Burgers Southwest patty!

Mmm...pasta!

Ingredients:

  • 1 can of black beans
  • 1 lb of brown rice or quinoa pasta, cooked
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 jar of salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp onion flakes
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne powder
  • one avocado, sliced
  • 2 Sunshine Burger Southwest patties, warmed and crumbled

Boil water and cook pasta per instructions on package.  While the pasta cooks, saute the onion in olive oil until translucent and then add black beans (rinsed and drained).  Add the spices and mix well. Add salsa and bean mixture.  When the pasta is done add the bean mixture and mix well. Top with avocado and Sunshine Burger crumbles and enjoy!
