One of my favorite things about Thanksgiving is mashed sweet potatoes – for a delicious and vegan spin on mashed sweet potatoes use coconut milk instead of dairy milk and butter. They are not only dairy-free and cholesterol-free but also healthier than many other mashed sweet potato recipes out there.
- 6 large sweet potatoes, chopped
- 1 can coconut milk
- 1/2 tsp ginger
- 1/3 tsp curry
- 2 tbsp olive oil
- salt and pepper to taste
In a large pot, cover the sweet potatoes with water and bring to a boil. Allow to simmer for at least 15 minutes, or until soft. Mash them to desired consistency and then add the remaining ingredients.
