I’ve had a particularly hectic week between work, dealing with a misbehaving car, a surly computer, and trying to maintain a somewhat functional social life. Last night I was so exhausted but still had a lot of work to do so decided to whip up something that was not only comforting but extremely easy to make. It was just what I needed.
Ingredients:
- Brown rice, cooked
- Black beans
- 4 leaves kale, chopped
- Cheese alternative (or the real thing if you dare) – I used Daiya brand cheddar cheese
- Southwest Sunshine Burger patty, crumbled
- 1/2 avocado, sliced
- Salsa or hot sauce
- Sprouts
- Lundberg Farms Pico De Gallo Rice Chips
Throw the rice, beans, kale, cheese, and sunshine burger crumbles and microwave until warm. Top with avocado slices, salsa, rice chips and sprouts.
